The Austrian company is taking over with new ideas and a sustainable concept Chef Albrecht Seltmann Managing the Donnersmarkt restaurant in Almanac Palais Vienna. His focus: Kitchen »Plantforward«which reinterprets traditional Austrian dishes and focuses primarily on vegetarian ingredients.
Growing up in a family that loved cooking, Seltman developed a passion for cooking at an early age. After training in Vienna, this took him to the best international restaurants from Prague to Berlin and even on a cruise ship. His time at the first Tien restaurant in Vienna was particularly formative A Michelin-starred purely vegetarian restaurant City. Here he deepened his fascination with vegetarian and sustainable cuisine, which today forms the basis of his culinary philosophy.
Seltmann has been at the stove at Almanac Palace Vienna since September 2023. At Donnersmarkt, he relies on regional ingredients, including vegetables, herbs, flowers and cheeses from the Austrian Alps. Meat and fish play only a secondary role. The concept aims to become more sustainable in the long term: Seltmann plans to switch entirely to Austrian ingredients and even develop brewed alternatives to coffee and chocolate.
