Serbian cuisine is known for its hearty and delicious dishes that are deeply rooted in the country's culture. One of these culinary specialties is ostipsi, traditional salty “biscuits” fried in oil and usually prepared as an alternative to bread or as a snack with beer.
The basic ingredients of ustipci are flour, water and salt. Depending on the recipe, a little oil, eggs or yogurt may also be added to improve the taste and texture of the dough, and baking powder to make it fluffy. The dough is usually prepared by mixing all the ingredients well to avoid clumps and then forming it into small balls with a spoon. The size of ustipci can vary, but the best (at least for us) are those that consist of two teaspoons.
They are deep fried until golden brown and crispy on the outside. Ready-made ostepsies are usually removed from the oil and placed on paper towels to remove excess fat, but this may take a minute and then they can be eaten because they are tastier then.
A particularly popular recipe comes from Serbian food blogger Gastrobrat, whose profile has more than a million views. For 14 ustipci, use 2 eggs, 200 ml of yoghurt, 1 tablespoon of sugar, 1 tablespoon of alcoholic vinegar (which is not common in other recipes), a pinch of salt, half a packet of baking powder and 200 grams of flour. .
