Baked semolina slices
ingredients
- 1/4 liter of milk
- 6 chicken semolina
- sugar
- salt
- 1 teaspoon grated orange peel
- Orange liqueur
- 1 egg
- 1 yolk
- Bread crumbs
- ghee
- oil
to prepare.
- Boil the milk with a little salt and orange peel. 2 tbsp orange liqueur (omit if children are eating with you) and 1 tbsp
- Mix in sugar. Stir the semolina into the milk
- Let it flow. Simmer for 20 minutes. Add the egg yolk and a tablespoon of butter to the mixture. Cook the semolina in a finger-thick layer in a dish rinsed with cold water
- Paint a baking tray. Let it cool and cut it into small rectangles. Beat the eggs with a pinch of salt. Dip the semolina slices first in the eggs, then in the bread crumbs. Press the crumb lightly. Heat some butter and oil in a non-stick frying pan. Bake semolina slices until golden.
- Serve with orange stew if desired. To do this, peel 2 to 3 oranges. Cut slices from separate skins. Caramelize 1 tablespoon baking sugar until light yellow. Deglaze with juice of two oranges. Let it boil a little. Season with orange liqueur. Line it with a little cornstarch and insert the orange slices into it. Remove from fire and leave to cool.
